Menu Suggestions

The following are only Menu Suggestions. Chef Judy will work with you to customize a menu to suit your tastes and dietary concerns.

 

Beef

Ginger-Soy Glazed Flank Steak—marinated w/ginger, garlic, lime juice and soy, broiled medium rare and sliced thin

Braised Beef Brisket—slow-cooked until fork tender in a flavorful cranberry sauce

Mahogany Beef Stew—braised in red wine and Hoisin sauce w/onions, carrots and green beans, served over egg noodles

Beef and Broccoli Stir-Fry—flank steak and crisp broccoli stir-fried in an Asian-style sauce w/garlic and ginger

Herbed Meatloaf—a blend of ground beef, pork and lamb with breadcrumbs, garlic and fresh herbs covered with slices of bacon for a moist and flavorful meatloaf

Poultry

Chicken Piccata—thin chicken cutlets cooked in a fresh lemon sauce w/garlic and capers

Chicken Marsala— thin chicken cutlets cooked with fresh mushrooms and shallots, finished with a Marsala wine sauce

Potato Chip-Crusted Chicken—boneless breasts baked with a crunchy coating

Apricot-Glazed Chicken—skewers of boneless breasts broiled with an apricot-balsamic glaze

Hoisin Chicken Stir Fry—pieces of boneless chicken, sweet red peppers and snow peas, stir-fried with Hoisin sauce, garlic and ginger and topped with peanuts or cashews

Asian-Style Orange Chicken—bone-in and skin-on chicken pieces roasted in a very hot oven with soy sauce, brown sugar and orange juice concentrate with a touch of garlic and ginger

Coriander Chicken Thighs—boneless thighs coated with ground coriander, broiled and finished with a Thai-lime sauce

Vietnamese Ginger Chicken—boneless thighs braised in a sweet and salty ginger sauce

Turkey Chili—ground turkey, red and black beans and lots of Mexican spices (may be prepared mild or spicy)

Turkey Meatloaf—lean ground turkey mixed with breadcrumbs and sautéed vegetables and covered with ketchup or chili sauce for a moist and juicy meatloaf

Pesto Salmon—salmon fillets baked with fresh basil, garlic and pine nut topping

Pistachio-Crusted Haddock—haddock fillets baked with a crunchy pistachio crust

Spice-Rubbed Tilapia in Lime-Butter Sauce—pan-seared filets finished with butter and fresh lime juice

Seared Scallops in Orange-Ginger Sauce—pan seared scallops in a sauce of orange juice concentrate and fresh ginger

Garlic-Crusted Shrimp—extra large shrimp broiled with a garlicky breadcrumb crust

Pork, Veal and Lamb

Pork Tenderloin with Orange-Rosemary Glaze—brined pork tenderloin, roasted with orange juice concentrate and fresh rosemary

Maple-Glazed Pork Roast—boneless, blade end pork, roasted with maple syrup, cinnamon, cloves and a touch of cayenne

Pork Cutlets in Mustard Cream Sauce—boneless pork cutlets, pan seared and finished with a coarse-grain mustard cream sauce. May also be made with chicken or turkey cutlets

Lamb Vindaloo—a spicy lamb stew with coriander, tumeric, cumin and ginger, potatoes and peas

Osso-Bucco—veal shanks braised in a flavorful white wine sauce

Pasta

Penne with Sausage, Swiss Chard and Pine Nut—penne pasta with chicken or pork sausage, sautéed swiss chard, garlic, pine nuts and freshly grated Parmesan cheese

Three-Cheese Lasagna—traditional meat lasagna with ricotta, Parmesan and mozzarella

Bowtie Primavera—bowtie pasta with asparagus, spinach, tomatoes and peas, topped with freshly grated Parmesan cheese

Fusilli w/Mushrooms, Pancetta and Peas—Fusilli pasta with sautéed mushrooms, pancetta or bacon and peas, with Marsala wine, cream and freshly grated Parmesan cheese

Pasta Dishes

 

Vegetarian

Roasted Vegetable Lasagna—meatless variation of the traditional favorite with roasted eggplant, zucchini, red pepper and three cheeses

Eggplant Stew—eggplant, tomatoes, peppers and chickpeas slowly simmered with garlic and olive oil and served over noodles or rice

Spring Vegetable Stew—carrots, snap peas, asparagus, turnips and broccoli cooked until barely tender in a light vegetable broth with fresh herbs and finished with a serving of potato gnocchi (or cheese tortellini)
